Recipe Thursday | Ham 'n Potato Soup


This week's Recipe:
My husband's mom has a ham and potato soup that he LOVES.  This is my version of the soup (his mom uses only water and no onion or garlic). I like more flavor to my soups so I use chicken broth.  This soup is different than most ham and potato soups in that it is brothy instead of chowdery. Most potato soups that I know is thicker and has milk in it. So this was a great change and I actually really liked it! Serve with some french bread or rolls!


Ham 'n Potato Soup

4 cups potatoes, diced
2 cups ham, diced
1 large onion, diced
2 cloves of garlic, minced
4 cups chicken broth
1 cube of butter
1/2 tsp salt, or to taste
1 tsp black pepper, or to taste

Place all ingredients into the crockpot and cook on low for 4-6 hours or until the potatoes are done.

Recipe Thursday - Cheesy Potato Dogs




This week's Recipe:
Couldn't be easier than this one, especially if you have some leftover mashed potatoes!


Cheesy Potato Dogs

16 Hot Dogs
10 cups Mashed Potatoes
2 cups grated cheese

Split hot dogs lengthwise and spread out on a tin-foil lined baking sheet. Top each hot dog with mashed potatoes and cheese. Put in 400 degree oven for 20 minutes.

Recipe Thursday - Hobo Dinner




This week's Recipe:
Perfect for a meat and potatoes meal that will please everyone!


Hobo Dinner

1 lb hamburger
6 Potatoes, diced
1 package of baby carrots, cut up
1 large onion, diced
2 tsp salt
2 tsp pepper
2 tsp garlic powder

Form 6 patties out of the hamburger and place in a aluminum-foil lined 9x12 pan.

Sprinkle the patties with plenty of salt, pepper, and garlic powder.

Mix potatoes, carrots, and onion and place on top of the hamburger patties.  Sprinkle again with salt, pepper, and garlic powder. Top with a layer of aluminum foil and seal edges.  Bake in a 375 degree oven for 1 1/2 hours.

Top with grated cheese, ketchup and/or ranch dressing.

Recipe Thursday - Slow Cooker Bacon Cheese Potatoes


This week's Recipe:
Nothing is better than cheesy potatoes! This is even better because you can cook it in the crockpot! Yay!  We served it as part of our breakfast for dinner meal - but it would be a great side dish for anything!



Slow Cooker Bacon Cheese Potatoes

1/4 pound bacon, diced (you can cook it first if you like, but you don't have to)
2 medium onions, thinly sliced
4 medium potatoes, cut into large cubes
1/2 pound cheddar cheese, shredded
salt and pepper
2 Tablespoons butter
green onions, thinly sliced (optional- but they are so yummy)
I also added green and red bell peppers


Line slow cooker with foil, leaving enough overlap potatoes when finished (this will help the potatoes not to stick to the edges and to help them steam. It will also keep them from getting mushy.). Layer half each of the bacon, onions, potatoes and cheese in the slow cooker. Season to taste and dot with 1 Tablespoon of butter. Repeat layers of bacon, onions, potatoes and cheese. Dot with 1 Tablespoon of butter. Overlap with remaining foil. Cover and cook on low for 6-8 hours (or on high for 4 hours).

Recipe Thursday - Cheesy Potato Fries


This week's Recipe:
I love cheesy fries and these are just over-the-top good! (I didn't get a good photo so this one is from Oh So Delicioso, but I'll try to remember to get one when I make it again).



Cheesy Potato Fries
Fries:
4-6 Potatoes
1/4 cup olive oil
Sea Salt, Fresh ground pepper, your favorite seasoning salt

Sour Cream/Ranch Sauce:
1 cup sour cream
1/2 cup ranch dressing
1/4 cup milk

Toppings:
1 cup (or as much as you like) Shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/2 cup real bacon bits
1/4 cup green onions


Cut potatoes into "steak french fries" size.

Place on foiled baking sheet.

Drizzle with olive oil and lightly toss with tongs.

Sprinkle salts and pepper over the potatoes.

Bake 400 for 40 minutes or until fork tender

in separate bowl mix: sour cream, Ranch dressing and milk. Whisk Together

On a separate platter smooth out 3/4 of the sour cream sauce.

Place hot potatoes on sour cream sauce.

Drizzle remaining sour cream sauce on potatoes

Sprinkle toppings.

Place under broiler for a few seconds to re-melt cheese. It's going to be messy and delicious.

Recipe Thursday - Egg-Stuffed Potatoes + Potato Puffs

This week's Recipe:
This is a great change to the normal stuffed potatoes! We loved these and it goes great with the little potato puffs!


Egg-Stuffed Potatoes + Potato Puffs

baked potatoes, slightly cooled
melted butter
kosher salt and black pepper
shredded cheese (cheddar, gruyere, fontina, pepperjack, or other of your choice)
eggs
additional fillings of your choice: sauteed vegetables, green onions, bacon or ham, etc.


Preheat oven to 350 degrees.

Slice a layer off the top of each potato. Use a spoon to gently scoop out insides, leaving a thin layer of potato against the skin and avoiding puncturing the bottom. Reserve scooped potato for another use.

Brush inside of each potato with melted butter and sprinkle with a little salt and pepper. Sprinkle a layer of shredded cheese into each potato and add fillings as desired (vegetables, diced meat, etc.) Fill each potato about 3/4 full. Crack one egg into each potato. Sprinkle with a little more salt and pepper. Top with additional cheese and toppings if desired.

Place potatoes on a baking sheet and cook for about 20 minutes. Egg whites should be set and yolks soft.


Potato Puffs:
What to do with leftover potato pulp?: Make some potato "puffs"...

Add an egg to the leftover potato pulp, ham, chives, cheese....Mix thoroughly.

Place in buttered mini muffin tins... sprinkle with extra cheese and chives.

Bake at 350 until nicely puffed...

Recipe Thursday - Ranch House Crockpot Pork Chops w/ Garlic Mashed Potatoes

This week's Recipe:
This is another recipe I loved and so did my family. The pork chops were so tender and it was just very savory and a great comfort food with the mashed potatoes. I actually mashed my potatoes like I usually do - with sour cream, cream cheese, and butter and then just added the garlic to it! Try it now!

Ranch House Crockpot Pork Chips w/Garlic Mashed Potatoesby Becky Higgins


6 pork chops, 1/2 inch thick
1 packet dry Ranch Dressing Seasoning
10 oz. can Cream of Chicken Soup
I like more gravy so I tripled the sauce and doubled the pork chops. I also just shredded the pork chops instead of leaving it in big chunks.
4 lbs peeled, cubed potatoes
5 Tbsp. real butter
1 c. fresh grated Parmesan cheese
6 cloves roasted garlic
1 – 1 1/2 c. warm skim milk (any milk will do, I just happened to use skim)
1 Tbsp. salt, or to taste
1 tsp. fresh cracked black pepper, or to taste

1. Place pork chops, Ranch seasoning and soup into a medium sized crock pot over high heat for 4 hours or low heat for 6 hours.

2. Place potatoes into a large pot of cold water. Place onto stovetop over high heat and bring to a boil. Once water is boiling, cook for 10-12 minutes or until potatoes are fork tender. Drain and transfer to the work bowl of a stand or electric mixer. Mix on low until potatoes are mashed then add butter, parmesan, garlic, milk, salt and pepper. Season to taste if needed. For thinner mashed potatoes add more milk, slowly until your desired consistency.

3. Scoop mashed potatoes onto serving plates and top with pork chops and soup gravy from crock pot. Enjoy!

This week's Recipe:
I am clearing out my pantry this month. Part of it is because we are a little low on cash and part of it is because I am starting couponing and I'm trying to get organized. Well, being that I didn't have the money to run to the grocery store at the time and I was trying to come up with something that would work for dinner. This is what I came up with, using things that I just had in my pantry (and fridge). It probably wasn't the most nutritious, but I'm not very good at doing that anyway, but it filled the tummies of my kids and that's what mattered!

Easy Ham & Au Gratin Potatoes

2 Boxes Betty Crocker Au Gratin Potatoes
Deli Ham
2 Cans of Corn

Prepare Au Gratin Potatoes, according to package directions (with the water, milk, sauce mix and dried potatoes). Place in a large casserole dish.
Add torn pieces of deli ham and cans of corn. Bake as directed on box.

That's it! I served it with garlic bread.

This week's Recipe:
This is one of my favorite soups. It's comforting and filling and yummy. Perfect for cold weather!

Ham & Potato Soup

4 cups peeled, diced potatoes
1/3 cup chopped celery
1/3 cup finely chopped onion
1 cup diced ham (or just tear up deli-sliced ham)
4 cups water
10 chicken bullion cubes
salt
pepper
5 tablespoons flour
5 tablespoons butter
3 cups milk
Shredded Cheese

Stir all but milk, flour and butter into crockpot. Cook on low for 6-8 hours, check tenderness of potatoes. 20 minutes before serving, melt butter in a saucepan, add flour and gradually add milk, stirring constantly over med heat until thick. Stir mixture into crockpot. Let cook 15-20 minutes more. Serve with Cheese on top.

This week's Recipe:
These are so delicious! They make the perfect side dish to any meat. (Try it with next week's Salisbury Steak Recipe!) Plus use the tops as a great Potato Skin hors d'oeuvres!
Twice Baked Potatoes

6 large baking potatoes
8 oz cream cheese, softened
1 cup sour cream
2 tbsp butter
2 tsp onion salt
2 tsp garlic salt
salt & pepper
Grated Cheese
Parsley

Preheat oven to 500 degrees. Microwave potatoes on high for 10 minutes. Bake in oven until tender, about 30 minutes. Cut off top of each potato (See bottom of this post for a great way to use up the tops of these potatoes.)

Scoop Flesh from potatoes into a medium bowl, reserving shells. Add cream cheese, sour cream and butter to potato flesh.

Beat potato mixture with a mixer set at medium speed until smooth and creamy. Add onion, garlic, salt, and pepper.

Spoon potato mixture into potato shells. Sprinkle with cheese. Reduce oven temperature to 350 degrees and bake until cheese melts and potatoes are heated through, about 15 minutes.



Potato Skins:
Leftover Tops from the Potatoes
Olive Oil
Season Salt
Bacon
Cheese

Cut leftover tops into wedges. Coat with oil and season salt. Top with Bacon and Cheese and bake until golden!

I've never made beef stew until now. I need more practice, but this was a good recipe for it. I actually did this in the crockpot - cooking the vegetables and meat beforehand. I just needed to save a little time. But this was good.


Beef Stew

3 pounds boneless beef chuck roast cut into 1 1/2-inch cubes (I used stew meat)
Salt and pepper
3 tablespoons vegetable oil
2 onions, minced
1 tablespoon tomato paste
2 garlic cloves, minced
3 tablespoons all-purpose flour
1 cup red grape juice, cranberry juice, or apple juice (I used apple juice)
2 cups low-sodium chicken broth
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
2 bay leaves
1 1/2 pounds red potatoes (5 medium), scrubbed and cut into 1 1/2-inch chunks (I used regular potatoes)
4-5 carrots, peeled and sliced one inch pieces (I just like to chop up baby carrots - its easier)
* I also added corn

Adjust an oven rack to the lower-middle position and heat the oven to 300 degrees. Dry the beef with paper towels and season with salt and pepper. Heat 1 tablespoon of the oil in a large dutch oven over medium-high heat until just smoking. Brown half of the meat, about 10 minutes, then transfer to a plate. Return the pot to medium-high heat and repeat with 1 more tablespoon of the oil and the remaining beef.

Add the remaining tablespoon of oil to the empty pot and return to medium heat until simmering. Add the onions and cook until softened, about 5 minutes. Stir in the tomato paste and garlic and cook for 30 seconds. Add the flour and cook for 1 minute. Slowly stir in the juice, scraping up any browned bits. Stir in the broth, thyme, bay leaves, and browned beef alone with any accumulated juices. Bring to a simmer, cover, and transfer pot to the oven. Cook for one hour.

Stir in the potatoes and carrots. Cover and continue to cook in the oven until the beef is tender, about one more hour.

Remove the pot from the oven and discard the bay leaves and let stand off the heat for 5 minutes. Season with salt and pepper to taste before serving.

This stew can be prepared ahead of time up to the point of adding the potatoes and carrots. Cool the stew, cover and refrigerate for up to 3 days or freeze up to 1 month. To prepare to serve, reheat over low heat, adding additional water or broth to adjust the consistency, before adding the potatoes and carrots and baking in the oven until the beef is tender.

This week's Recipe:
I was completely craving Potato Logs a few weeks ago. I was in a designing frenzy and up really late. Yea, so I caved on my resolution to eat less and of course not to eat so late too, but I needed to stay awake, so I decided to try and make these myself. So I improvised with what I have on hand - and sorry, I don't have exact measurements for you - you'll just have to figure it out! But I think they turned out great and my weight on the Wii Fit the next day will tell you that I liked them!


Potato Logs

Potatoes, scrubbed with skins on
Olive Oil
Mrs. Dash
Italian Bread Crumbs
Seasoning Salt
Garlic

Grated Cheese
Fry Sauce or Ranch Dressing

Cut potatoes in half - then cut each half into thirds (so that you have six wedges for each potato)

Put Olive oil, Mrs. Dash, Garlic, Seasoning Salt in a ziploc bag - then add potatoes. Mix potatoes in bag - until seasoning is on all potatoes.

Then add bread crumbs to the ziploc bag and again mix well.

Add a bit of olive oil to your cookie sheet Put on Cookie sheet in a single layer. Tip: Buy the non-stick aluminum foil and put it on your cookie sheet before adding the potatoes for a quick cleanup! I promise you will continue purchasing this foil - I love it!

Bake on 375 for 45-60 minutes. Top with Grated Cheese if desired.

This week's Recipe:
I never knew tuna could be so good! Seriously - this is a quick and yummy dinner that you can make on a night when you need to whip something up fast!

Tuna Patties with Gravy

2 cans of tuna
1/2 can cream of mushroom soup
1/2 cup fine bread crumbs (I used the italian bread crumbs that I had)
2 tablespoons onions (I just used minced onions because that's all I had at the time)

My family likes leftovers and lots of gravy - so we actually doubled this recipe and it worked great. We served it was mashed potatoes.

Mix ingredients together. Shape into patties and fry on both sides until brown. Warm up the rest of the mushroom soup to use as gravy for the patties.

There's just nothing like COMFORT FOOD and mashed potatoes and gravy is the ultimate in comfort!

Hamburger Gravy & Mashed Potatoes

1 lb hamburger
6-8 cups Milk
Corn Starch
Mashed Potatoes

Brown your hamburger with onion, salt, pepper, and garlic in a large skillet.

Add your milk to the skillet and stir in just enough corn starch to thicken.

Keep stirring until the gravy is smooth and thick.

Serve gravy over mashed potatoes!

Recipe Thursday - Hamburger Pie

Hamburger Pie

1 lb hamburger
1 can corn
1 can green beans
1 jar of your favorite spaghetti sauce
Mashed Potatoes
Grated Cheese

Brown your hamburger with onion, salt, and pepper. Place in bottom of a casserole dish.

Add corn, green beans and spaghetti sauce to the hamburger and mix all together.

Top hamburger mixture with Mashed potatoes and the cheese!

Cook at 375 degrees for 30-45 minutes until heated through.

This week's Recipe:
This is another meal that I started to make in the first few years of my marriage and have kept changing things until now it is perfect! At least perfect to the tastes of my family - but I've made it for friend gatherings and it always has rave reviews!


Chicken Enchiladas

2 boneless skinless chicken breasts
18 corn tortillas
Grated Cheese
{I sometimes add spanish rice to this as well and I serve it with tator-tots}

Sauce:
2 cans cream of chicken soup
16 oz sour cream
1 can of (red) enchilada sauce
small can of green chilies
1 can black beans


Cook and season chicken (I use salt and Mrs. Dash). I like to cook the chicken in my crockpot all day with a can of cream of chicken soup. Then when I am ready to put the meal together, I just use 2 forks and cut up the tender chicken right in the crockpot. It works great!

In a large bowl - combine all the ingredients for the sauce. Mix well.

In a deep rectangle pan - put a very small amount of the sauce at the bottom.

Then layer 6 of the tortillas (overlapping) at the bottom of the pan.

Add half of the chicken and cover with cheese.

Top with 6 more overlapping tortillas.

Cover the tortillas with half of the sauce.

Add the remaining chicken and cover with cheese.

Then top with the last 6 tortillas, the remaining sauce, and cheese again.

Bake at 375 degrees for 45 minutes until bubbly!

Recipe Thursday - Meatloaf & Death Potatoes

This week's Recipe:
This is actually 2 separate recipes, but I always serve these together! They compliment each other very well. I've been making this since I was married and over the last 11 years I have created this meal to suit my own family's tastes. It is my husband's absolute favorite meal that I have ever and probably will ever make. I admit - that it is actually kind of hard to make a recipe out of this because by now I don't even measure any of the ingredients - I just throw it all together, so I'll just have to do the best I can.

These potatoes are actually called Sour Cream Potatoes - but in the LDS Culture (and maybe other religions as well) they are called Funeral Potatoes because they are often served at funeral luncheons. It is a wonderful comfort food. My husband always calls them Death Potatoes, so that's just what they are known around my house. If you didn't want to make it with meatloaf - some diced ham into the casserole is extremely good - I've often served it with ham for Christmas dinner!

I've made the meatloaf in the oven a lot - but the past few years, I've enjoyed cooking it in the crockpot - it's very tender and doesn't get dried out!


Meatloaf & Death (Funeral) Potatoes

Death Potatoes
I like to make the potatoes ahead of time (either the day before or the morning before) and just put it in the fridge and then stick it in the oven an hour before serving!
8-10 potatoes
16 oz sour cream
2 cans cream of chicken soup
1/2 cup melted butter
1 can corn
grated cheese
crushed corn flakes
melted butter

Boil the potatoes (with the skins still on) until done. Don't let them get too soft. Peel and dice the potatoes.
Mix sour cream, cream of chicken soup, butter, corn and grated cheese into a casserole dish. Add the potatoes and mix well.
Put melted butter into a ziploc bag and add the corn flakes. Mix in bag until corn flakes are all covered in butter and then top the potatoes.
Bake at 375 degrees for an hour if you had made it ahead of time and usually about 30-45 minutes if not made ahead of time. Just until it's all bubbly.

Meatloaf
You can just use 2 lbs of hamburger if you don't have the pork sausage. This will cook in your large crockpot!
2 eggs
1 cup milk
minced onion
1 lb hamburger
1 lb pork sausage
Crushed Ritz Crackers
4 slices of wheat bread
baby carrots
1 package Beef Gravy Mix
BBQ Sauce

In a large mixing bowl, beat eggs and add milk and onion. Mix well. Add hamburger and pork sausage. Then add enough crackers and bread so that the meatloaf mixture is easily formable and not runny. (I usually mix this with my hands so that it all gets mixed in very well).
Fill the bottom of your LARGE Crockpot with baby carrots (1 layer). Sprinkle your Beef Gravy mix over the top of the carrots. Then place your meatloaf on top of the carrots - (use your hands to create a loaf of the mixture). Pour BBQ Sauce over the top of the meatloaf.
Cook for 5-6 hours on high and 8-10 hours on low.

This one is so yummy. A great comfort food! It's something that can be thrown together quickly and into the oven. It's great!


Tator-Tot Casserole

1 lb ground beef
Onion
Salt & Pepper
1 large package of frozen Tater-Tots
1 can cream of chicken soup
Corn
Grated Cheese
Mrs. Dash

Brown ground beef with onion and salt and pepper. Then place it in a large casserole dish. Mix the frozen Tater-Tots, cheese, and corn with the ground beef. Sprinkle with Mrs. Dash. Cook for 30-45 minutes at 400 degrees.

This one is nice and easy and its a wonderful comfort food! It also uses ingredients that you most likely have on hand and makes for a quick meal! Another one of my family's favorites!


Potato Ham & Cheese Bake

Potatoes
8 oz Sour Cream
4 oz Cream Cheese
1/2 cube butter
Sliced Deli Ham
Grated Cheese
Corn

This is how I always make my mashed potatoes: Peel, cut-up, and boil potatoes in a large pan of water until soft but not too soft. Mash up Potatoes with butter, cream cheese and sour cream. I use my stand mixer and it makes the potatoes so smooth! You can add less/more of the butter, sour cream, and cream cheese as needed.
For each serving - place 2-3 slices of ham on cookie sheet. Top with large serving of mashed potatoes and add grated cheese to the middle of the potatoes.
Bake at 375 degrees until cheese melts - about 10 minutes. Serve with Corn!
