Recipe Thursday - Creamy Italian Pasta with Crunchy Chicken



Each Thursday, I am going to be sharing a recipe with you!I will pick a recipe from my collection and I will be sharing where I got the recipe and everything. But I am going to include my own photo of the finished food, the original recipe, and try and share the things I changed when I made it!

This week's Recipe:
I loved the added crunch to the chicken! This had really great flavor and I am really starting to love the Philadelphia Cooking Creme! Of course as always, my family loves more sauce, so I doubled the sauce part!

Creamy Italian Pasta with Crunchy Chicken

3 large chicken breasts (pounded thin)
2 1/2 C corn flakes
1/2 C flour
1/4 tsp salt
1/2 C milk
6 T olive oil
1 16 oz package bowtie noodles

Sauce:
1 10 oz container Philadelphia Cooking Cream (Italian Cheese and Herb Flavor)
1 can cream of chicken soup
1 C chicken broth
3/4 C milk
fresh parsley, chopped (optional)
* I added some frozen mixed veggies


In a small food processor crush the corn flakes into crumbs.

In a bowl mix the 1/4 t salt to the 1/2 C flour. Stir to combine.

Place the flour, milk and crushed cornflakes each into their own separate bowls.

Dredge the chicken in the flour. Be sure it gets covered on both sides.

Dredge each piece in the milk and then immediately into the corn flake crumbs. Again, be
sure both sides are covered well.

Add the olive oil to a hot skillet.

Start cooking your noodles.

Carefully lay each chicken piece into the hot oil. Sprinkle with a little bit of salt and pepper. Cook over medium high heat for about 5 minutes....or until the underside of each piece is nice and golden brown. Turn the pieces over.

Cover the pan and reduce the heat to medium. Let the chicken cook for about 7 more minutes,or internal temp of 180, being careful not to burn the bottoms.

When your chicken has been cooked through remove it from the pan and place it on a plate. Cover with tin foil.

Into the same pan pour your broth. Philly Cooking Creme, Cream of Chicken, and milk. Whisk the sauce around and let it get all warm and bubbly. Should only take about 3 minutes.

Serve over your cooked pasta and chicken. Garnish with chopped parsley if you choose.

Family History TuesdayZ | Going Away and Coming Back

Here is this week's journal prompt :

Monday Magic - Family Summer Camp



Each Monday (that doesn't have a new release), I am going to be offering a little Magic to start your week. It might be a fun idea, some inspiration, a tutorial, or just sharing some thoughts - Whatever I feel like! So come back and share your thoughts too!


This week:
I am so excited about my structured plan for our Summer this year. I've been doing lots of research and trying to come up with a good plan that involves the kids not being bored, the kids actually learning something, and the kids having fun - all at the same time. I'm so excited about what I have come up with for THE SMITH FAMILY SUMMER CAMP!  I have adapted this plan for my needs and I can't wait to start! We will be starting the SECOND week in June, since the first week of June we are going to go help out on my family's ranch.

So it is a point system. My kids will have a chance to earn 30 or more points a week. They can earn and then trade in the points for special activities that we will do as a family on Saturdays.

There are 6 categories that they need to participate in DAILY to get their points:

* Reading - Read 20 minutes a day

* Writing - Write in Journal (I will have prompts for them to use)

* Physical - Do some physical activity for at least 20 minutes

* Home - There will be a family job list that they can choose to do something from

* Extra - Some extra educational activities will be listed that they can choose from

* Daily Adventures - These are special activities that I will have planned for us to do in these particular categories:

Make-it Mondays - This is our day to create something new

Textural Tuesdays - This is our Library Day - our library is having special things that go with the Summer Reading Program.

Wet Wednesdays - The Day to do something with water - swimming, sprinklers, Seven Peaks Water Park (Since we have a season pass now), etc.

Thinking Thursday - Our research day. We will be researching the answers to questions that the kids have and things we are wondering about.

Foodie Friday - This is our chance to cook with the family. We will be making desserts and new things to try.




We have made a list of fun adventures that the kids want to do and assigned a number of points to each one. So if the kids earn their points we can go do them. Things like: Bowling, Trafalga Fun Center, Dates with Dad & Mom, Princess Festival, Factory Tour, etc.


I think this is going to be a great summer. JJ also has a summer camp that goes for about 5 weeks that will just be in the weekday mornings and Beth has 2 summer camps - Educational one that lasts 2 weeks and a Drama camp that lasts 1 week. I also want to get them both into Swimming lessons and Beth has a soccer camp in June. Busy, Busy, Busy. But I'm excited to offer them things to do that will actually teach them while having fun!

Joey was laying on a leather couch at our vacation home, squirming around trying to get comfortable.

Beth, hearing the noise, asked her brother "Is there a storm outside? Because I think I hear thunder..."

JJ pointed to where Joey lay squirming, and Beth said "Oh, it's just daddy moving around."

Yea, apparently Joey now rivals a storm.

Recipe Thursday - Braided Spaghetti Bread

This week's Recipe:
For me, there was just no way to get enough spaghetti into the bread. I feel like there was just too much bread to the amount of spaghetti there was.  I liked the flavor, but it just needed more sauce or something.  So next time, I think I will just top it with some of the leftover Spaghetti that wouldn't go into the bread. Also, I used Wheat Bread - but I think I would like it better if I used a French Bread or White Bread Dough! So maybe think about those couple of changes for when you try it too!

Braided Spaghetti Bread

2-3 Loaves Rhodes Bread Dough thawed to room temperature (or make your own bread dough)



** Next time, I will make my own French Bread Dough and use that
8 ounces spaghetti, cooked
1 lb hamburger
seasonings: garlic powder, minced onion, salt & pepper
1 jar of your favorite spaghetti sauce
grated mozzerella cheese
1 egg white, beaten
Parmesan cheese
parsley flakes


Take a large baking sheet out and spray it or use parchment paper on the bottom.

Take your Bread dough and place it in the middle of your baking sheet and roll the dough (on the baking sheet) into a rectangle as big as the baking sheet.  Cover with plastic wrap and let rest for 10-15 minutes.

Cook Spaghetti according to package instructions.  Drain and let cool slightly.






Brown your hamburger with your favorite seasonings.

Add Sauce to the hamburger and then pour sauce over your spaghetti noodles. Mix well.

Remove wrap from dough. Place Spaghetti/Hamburger/Sauce mixture down the center of dough, lengthwise.

Top with Cheese.

Make cuts 1 1/2 inches apart on long sides of dough to within 1/2 inch of filing. Begin braid by folding top and bottom strips toward filling. Then brad strips left over right, right over left. Finish by pulling last strip over and tucking under Braid.

Brush Bread with egg white and sprinkle with Parmesan Cheese and parsley.

Bake at 350 degrees for 30-35 minutes or until golden brown. Cool slightly and slice to serve.

I was reading the Daily Digi this week and came across a very interesting article on "Moving the Memories." The article reflected on the things that we keep around our houses that are sentimental and how to part with things that maybe we don't really need anymore.

One of my goals for the summer is to deep clean my home and especially my shed. I definitely get sentimental about the things that I keep and I just have way too much "stuff." I need to learn to let go and that has been a really hard concept for me to grasp. I would really like to internalize the above quote and get rid of some of the things that are holding me back.  I think I need to do a little bit of deep clean inside my soul as well. I have been dreaming a lot about the past - high school, when we were first married, etc. and I seem to be reflecting so much on my mistakes and I really think it is hurting my future. I don't really know why my past has been bothering me so much, but it is not helping my depression/anxiety - and its not helping me to KEEP MOVING FORWARD. So I've decided that I need to add another goal this summer - to "let it go." Let stuff go physically and emotionally. I think if I start focusing more on the present that I will be a better mom, wife, and person.

Friends



Beth is such a social butterfly. She loves playing with her friends. She is always asking for playdates and talking about her friends at school. I don't arrange playdates very often because it always seems like such a hassle with how busy it gets, but I really should do it more often. Beth loves to be with her friends.

Beth finally got to have her friend, Natalia over for a little while. They had a picnic and played outside. I think they had a great time. The next week, Beth got to go to Natalia's house and they had a tea party and made cupcakes.

April 2012 Round-up



Since I have decided to take a little break from Life 365 this year, I have decided to participate in monthly Round-Ups instead! I've been following The Scrapbook Lady for years, and I have always admired her Round-ups. It was about time that I give it a try!


APRIL 2012

What reading/learning did I do this month? (books, blogs, magazines, ebooks, podcasts, classes, etc.)

I do read A LOT of blogs daily, so I am not listing them, but my Google Reader is jam packed full of reading that I do!  

I am still on an audiobook kick. So here is what I have been listening to this month:

Specials by Scott Westerfield (not finished yet) 







And I actually sat down and read a book too! I pretty much cried through the whole thing. Nie is truly so inspirational. I am just still wrapping my head around it.

Heaven is Here by Stephanie Nielson



What entertainment did I watch/listen to this month? (movies, tv shows, plays, music, concerts, etc.)

What fun things did I do with my family and/or friends?
We were able to spend a wonderful Spring Break - 9 days - together at our vacation home in Eden, Utah. Many adventures insued, including a trip to the ER, Beth's Birthday, and JJ having a  Post about all that is HERE.


We were able to babysit Mallory for a couple of days, while her parents went on a little anniversary trip. It was such a delight to have her with us. I miss having a little one in the house - my kids are just getting so big, too fast.


What gifts did I give and/or receive?It was Beth's birthday this month. We were able to reprogram my old iphone into an ipod touch for her. We purchased some fun apps for her that she is completely loving. We also got her a jump rope, headphones, and some books.




What special or unusual purchases did I make?
I  purchased Squinkees, bubbles, and candy for Easter, along with Beth's Birthday gifts.


What illnesses or health concerns did I have?
I'm still working out my anxiety and depression. Joey's legs have been giving him a bit of trouble and he has had to start wearing special socks to combat the effects of his gout/blood clots.

What were my accomplishments this month?
I think my major accomplishment was actually just staying "mostly unplugged" from the computer during Spring Break. It was hard to do and I did check emails a bit, but I didn't do any design work. I was really able to focus on my family and that was so nice.

I was able to release a great new collection - SPRING FLINGZ & EASTER THINGZ and I was proud of the way it came together.


What were my disappointments this month?
I'm having a hard time staying on top of my depression/anxiety. I keep forgetting to take my pills and it is making my body have some bad effects. Its been hard to just get through some days and it saddens me that I just don't have the energy that I would like to have. I've been extra tired this month and so I haven't been able to stay up like I'm used to. That is usually my time to get design work in and its just not happening like I would like it too.

How did I do on my goals for the month? (Or any current short or long term goals)
We did a little better at doing more Scripture Study and Daily Lessons. It's still not where I want to be - but its becoming more of a habit and that's a good thing.
I am doing much better at planning out my meals and couponing. It's getting easier!
I still failed at getting a personal fitness plan going. Not sure why its so hard but I need to lose weight!

Anything else noteworthy to include?
We made a trip to the ER during our vacation when Beth smashed her finger. It has healed really well and we are so grateful.

JJ had a febrile seizure. We were hoping he had outgrown it, but we are grateful he is doing fine now.

We were glad to have Grandpa and Grandma and Uncle Lane and Clint spend some time with us during Spring Break.

I don't know about you - but honestly, my family is not doing the best in the financial area. We live paycheck-to-paycheck, we don't have any savings and most of the time we are just getting by. We have debt and I know we don't have the financial savvy to seem to get out of it. I'm honestly stressed constantly about money and I have grown to hate it with a passion. My husband and I have taken turns paying bills and trying to get out of debt, but we haven't had much success.

So when I was offered this book, I thought that I would give it a chance. I completely connected with Tristi and realized that we are in much of the same place that her family is/was. It was empowering to read through the book and realize that there are things that my family can do to get out of the financial mess that we have put ourselves in. It's scary. Finances are just completely scary to me and I'm still working myself up to taking control.  I really appreciated the way the book was written for women and that there is an emotional side of finances that we need to learn to work with.

I was taken back a little bit with how the book was written. Basically it is written as a conversation between Tristi and Brett & Ethan and that was a little different for me. But as I read through the book, I really appreciated the tone and the way it was conveyed. I could completely understand what Tristi is going through because my family is too. I really appreciate the courage that Tristi has taken to put herself out there and it helps me to realize what is possible. I appreciate not only the advice, but all the strategies and tools that is offered to help each family, in their own circumstances, get out of debt and take control of their finances. I love that its not just a sales-pitch - Tristi is actually going through the strategies herself and we can watch and learn along with her.

This was a quick read for me - but it has left me with a deep desire to take control. Even though this book was written for women, I am going to encourage my husband to read it. In the past, we have taken turns controlling the finances, but I think its time that we do this together. I'm still reaching for the courage to take control, but I think this book is really going to empower me to make it work.




I would highly recommend picking up this book, especially if you are ready to take control of your finances. There is hope for all of us.

Recipe Thursday - Pepperoni Roll-ups

This week's Recipe:
These would make a great snack, but you can also use it for dinner, which is what we did. If your kids like pizza, this is a great one!

Pepperoni Roll-upsby This Momma Cooks



1 tube (8 ounces) refrigerated Pillsbury crescent rolls

32 slices pepperoni

4 pieces string cheese, cut in half

1/4 teaspoon italian seasoning

1 Tablespoon butter, melted

Marinara or Pizza sauce, for dipping


Preheat oven to 375 degrees. Unroll crescent dough; seperate into 8 triangles. Place 4 pepperoni slices on the large end of each triangle. Place one half string cheese on the top of the pepperonis. Roll up towards point. Place roll ups at least 2 inches apart on a lightly greased cookie sheet.

Mix together Italian seasoning and melted butter. Brush over the tops of the roll ups. Bake for 10-12 minutes or until golden brown.

Monday Magic - A Kinder Me

This week:
I was reading a blog a few weeks ago and I really connected with the message that the post reflected. In the post, Ro talked about being kinder to ourselves. Its so easy to talk badly to yourself. I know that I often find myself getting so discouraged and reflecting on how many things I DO NOT get done. Not only does this make me feel badly about myself, but it also overwhelms me until I'm even more unproductive. I think so many of us have so many things on our to-do lists and so many things we want to be successful at. Its so easy to reflect on the things that we don't get done. But how about being a little kinder to ourselves and remembering the things WE DO get done. Even the things that seem "little" to us, are still things that take time and energy to get done and we should remember them.

I'm going to start taking Ro's challenge and start making a list of the things that I do get done and the things that I do well. I think "the kinder me" will really appreciate it.

Haircuts



Before I left for the Blogger Conference in March, the kids and I got haircuts. I rarely do anything to my hair and I just needed a change. I got several inches cut off, some layers, and some highlights. JJ just got a buzz and Beth got a few inches off her hair. We all love our new do's! Just right for Spring Weather!

High/Low: May 4th



My LOW this Week is that I completely whacked my system out. I was stressing over getting my new kit done and stayed up way too late almost every night - including one night of not sleeping at all. Of course that was the day that I had to drive to Manti and back. I was SO SO SO tired.

My HIGH for this Week is that I had the opportunity to attend a session in the Manti temple, when my brother got his endowments out. It was nice to spend an afternoon with my parents and brother and my new almost-sister-in-law and her family.
