Recipe Thursday - Creamy Meatballs



Each Thursday, I am going to be sharing a recipe with you!I will pick a recipe from my collection and I will be sharing where I got the recipe and everything. But I am going to include my own photo of the finished food, the original recipe, and try and share the things I changed when I made it!

This week's Recipe:
I usually make my own meatballs but it was really nice to actually just pick up a bag of frozen meatballs and stick it in the crockpot. Next time I make meatballs, I will have to make extra and freeze them so I can use them for this! Janis shared 2 different recipes in her post - well, I kind of combined them and created my own recipe! So check out the link below for her recipes and then look below the picture for my recipe!

Creamy Meatballs
by Janis from Dinner Time Ideas


1 can cream of chicken soup
2 cans cream of mushroom soup
1 pkg onion soup mix
16 oz sour cream
2 lb bag or larger of Frozen Italian meatballs
Rice or pasta (I used bow tie pasta)

Place soups and onion soup mix in crockpot. Mix well. Pour in meatballs. Cook on low heat for about 4-6 hours. Mix in sour cream an hour before serving. Serve over pasta or rice.

Recipe Thursday - Cheesy Garlic Bread

This week's Recipe:
I made this bread with the lasagna recipe that I shared last week! It's AMAZING!


Cheesy Garlic Bread

5 garlic cloves, finely minced
8 tablespoons (1 stick) butter, softened
1/2 teaspoon water
1/4 teaspoon salt
1/4 teaspoon pepper
1 18-20-inch baguette or loaf of french bread, sliced in half horizontally
1 1/2 cup shredded white cheese (First time I made this I used Parmesan and Mozzerella, but the second time, I only had the Monterey Jack/Cheddar mix. Both times, they were great!)

Adjust oven rack to lower-middle position and heat oven to 400.

In a small nonstick skillet, cook the garlic, 1 tablespoon of the butter and water over low heat, stirring occasionally, until the mixture is straw colored, 7-10 minutes. It is important to keep the heat low or the garlic will burn and turn bitter. The garlic should be lightly browned but not burned!

In a small bowl, place the remaining 7 tablespoons softened butter and the salt and pepper. Mix in the hot garlic mixture and stir to combine. Using a rubber spatula, spread the butter mixture on the cut sides of bread. Sandwich the bread back together and wrap the loaf in foil. Place the wrapped loaf on a baking sheet and bake for 15 minutes.

Remove from the heat and turn the oven to the broil setting.

Sprinkle the bread with the shredded cheese. Broil until cheese has melted and bread is crisp, 1-2 minutes. Transfer the bread to a cutting board with the cheese side facing down. Cut into angled pieces and serve. Please try to exert self-control and share the bounty with others at the table.

Recipe Thursday - Classic Italian Lasagna

This week's Recipe:
I like lasagna. I usually buy those frozen lasagnas when I get in the mood and up to this point I have never tried making my own. But I finally broke down and gave it shot after seeing this recipe and it was amazing! Truly delicious! I did make a couple of changes to Mel's original recipe and my changes are in italics. This took me a really long time though and next time I am going to make 2-3 at the same time and freeze it! Plus I have never actually cooked mushrooms before - but I did this time and it turned out great! And the cheesy garlic bread - totally to die for (I'll share that next week)!


Classic Italian Lasagna

*Makes one 9X13-inch pan of lasagna (and requires the use of several pots and skillets...but don't worry, you can wash those up in a snap while the lasagna is baking)

Red Sauce:
2 tablespoons olive oil
1 tablespoon butter
4 cloves fresh garlic, finely minced
1/2 large onion, diced (about 1/2 cup)
8 ounces mushrooms, chopped
2 (8-ounce) cans tomato sauce (We like extra sauce, so I added another can of sauce)
1 (6-ounce) can tomato paste (I added 2 cans just because I like the extra sauce)
1 (14.5-ounce) can diced tomatoes, undrained
2 teaspoons Italian seasoning (or a mix of dried oregano and basil)
1/2 teaspoon salt
1/2 teaspoon pepper

White Sauce:
3 cups milk (I used whole)
5 tablespoons flour
4 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon pepper

9 lasagna noodles, boiled for half the time on the box (or use 12 of the no-boil noodles, of which I far prefer the Barilla brand)
1 pound ground turkey (I used ground beef)
1 pound mozzarella cheese, shredded
8 ounces Parmesan cheese, shredded

Preheat the oven to 350 degrees. Lightly grease a 9X13-inch baking pan with cooking spray or with a napkin dipped lightly in olive oil and set aside.

In a large skillet, brown the ground turkey over medium-high heat, breaking the meat apart into pieces with a wooden spoon. When turkey is cooked through, drain the grease and set aside.

In a medium-size saucepan over medium-high heat, add 2 tablespoons olive oil and one tablespoon butter. Add a pinch of salt and pepper. When oil/butter is hot, add the garlic, stirring constantly. When the garlic is lightly browned, but NOT burned, add the onion and mushrooms. Continue cooking on medium-high heat until the vegetables are soft and browned and the fluid has mostly cooked out. Remove from heat and either using a handheld immersion blender or transferring the vegetables to a blender, blend the vegetables to a paste-like mixture. (I actually used a food processor for this part.) Return the pot to the heat (pour the pureed vegetables back in, if using a stand-alone blender) and add the tomato sauce and tomato paste. Stir to combine. Then add the diced tomatoes, Italian seasoning, salt and pepper. Stir. Cover and let the sauce sauce simmer for 30 minutes over medium-low heat, stirring occasionally. Right before using the red sauce in the lasagna, stir in the reserved ground turkey.

While the red sauce simmers, if using lasagna noodles that need to be boiled, bring a large pot of salted water to a boil and boil the noodles for half the time suggested on the box. Once the noodles are cooked, drain, but do not rinse. Add a dab of olive oil to keep them from sticking together. If you are using no-boil noodles, you can skip this step.

Also while the red sauce is cooking, melt the four tablespoons butter and when melted, add the flour, stirring constantly to combine and letting the mixture cook, while stirring, for a minute or two. Gradually add in the milk, whisking constantly. Add the salt and pepper. Slowly whisk the white sauce, ensuring it doesn't burn on the bottom of the pan, while cooking it over medium heat. Continue slowly stirring or whisking while the white sauce cooks and thickens quite a bit, about 5-7 minutes. Add a pinch of mozzarella for good luck, if you wish!

To begin layering the lasagna, keep in mind that you'll have three layers of noodles as well as three layers of the sauces and cheese - so plan on splitting all the sauce and cheese piles into thirds so you don't run out at the end! On the bottom of your lightly greased baking pan, layer three pre-boiled noodles or four no-boil noodles, slightly overlapping the no-boil noodles. Layer the red sauce, white sauce, Parmesan and mozzarella cheeses, spreading all to the edges and top with another layer of noodles. Again, layer the red sauce, white sauce, Parmesan and mozzarella cheeses and top with the final layer of noodles. Layer the sauces and cheeses again.

Cover the lasagna with a greased layer of aluminum foil and bake for 30 minutes. Remove the foil and let the lasagna sit for 15 minutes before cutting and serving.

Life 365: Week 41

We have been getting quite a bit of rain the past couple of days and it is actually feeling like it is Fall. I love it. Fall is definitely my favorite season right now and I hope we get a long one. I spent quite a bit of the day making a menu and grocery shop list. I'm determined to stay within my budget and stick to the menu this month!

A major grocery shopping trip turned into a cleaning frenzy in the kitchen today. I cleaned out all the pantry shelves and got everything organized. It feels nice to have it all full.

We got the kids school pictures back today. I loved how Beth's turned out. JJ's smile was pretty cheesy, but it did capture how he is with photos right now!

Today was pajama day at school and both JJ and Beth were so excited about wearing their pjs all day! I remember having the days at school where you got to do things out of the ordinary. Always so fun!

The kids have really enjoyed the light sabers that we got at the Fall Festival. I love their creative play. They built a fort with blankets and pillows and play fought all afternoon after they got home from school.

I have been sick with a bad cold this week and my bedroom shows it. I've got the humidifier going and been eating soup. Beth had a touch of a cold today and so she didn't go to school and unfortunately she missed her last soccer game of the Fall season. :(

JJ's class is doing a special thing every month. At the last day of the month, the parents are invited to go to their classroom and hear the songs that the kids have learned that month. So today, I was able to go listen to JJ and it was so fun to hear him sing and enjoy being with his class. We also got to babysit Mallory all late afternoon/evening and it was so fun to have her cute little spirit in our home!

Today was Parent Day in Beth's class and she was so excited to have her Daddy come to her school! They had a fun afternoon and then Dad brought both JJ and Beth home. I love seeing Joey with the kids!

Today was another pajama day for the Smith Family. We just hung around the house and listened to General Conference and being lazy today. After conference, we headed to the movie theater and watched Legends of the Guardians (The Owls of Ga'hoole). It was very cute and the kids loved it! I also hosted our Birthday Bash 6 Celebration Crop @ Digitals today and it was a great time!

Today's photo says it all. It has just been a rough season so far for our Colts! Here's hoping they start making it happen! Today was General Conference and I really enjoyed hearing from the leaders of the Church, especially from President Monson!
