My LOW this Week is that my meds have been giving me some side effects this week.

My HIGH for this Week is that thanks to FlyLady - my home is actually clean! We are leaving to go to Southern Utah for the weekend - and I don't have to worry about the house. YAY!

Recipe Thursday - Lemon Chicken Costoletta


This week's Recipe:
This had such great flavor and was a big hit in my family - especially for my husband. I loved that the lemon flavor was not so overwhelming but had the perfect balance. Such a filling and delicious meal!

Lemon Chicken Costoletta


Chicken:
5 chicken breasts, cut in 1/2 horizontally (so they are thinner and easier to brown)
2 t. lemon pepper seasoning
1. Montreal Steak Seasoning or Garlic Seasoning (another great seasoning mix from Sam's Club)
Zest of one lemon
⅓ c. cornstarch

2 eggs

Breadcrumb Mixture:
1 ½ c. seasoned breadcrumbs
¼ c. grated parmesan cheese

Lemon Sauce:
½ red onion, diced very small
2 cloves garlic, minced
2 T. butter
1 T. Dijon mustard
Juice of one lemon
Zest of one lemon
½ t. black pepper
½-1 t. salt
1 T. cornstarch
8 ounces sliced white mushrooms
1 c. chicken broth
1 ½ c. whole milk (or half & half)
½ c. parmesan cheese


Place the chicken breasts and seasonings into a large bag or bowl and cover chicken breasts evenly with mixture.

In another bowl combine 2 eggs and beat until smooth. Mix together breadcrumb mixture.

Dip each piece of chicken into the egg mixture until covered. Dip the wet chicken breasts into the breadcrumb and cheese mixture.

Once the chicken breasts are breaded, place a few of them in a saute pan that has been heated to a medium high temperature. Let 2 T. butter melt and place the chicken breasts into the melted butter. Let the chickens stay in the pan until they are a golden brown color. Turn the chicken breasts over to the other side and continue to brown on the second side. Don't cook the chicken all the way through, just brown it.
 

Place the browned chicken breasts onto a cookie sheet or in a 9x13 pan and continue browning all of the chicken breasts. Keep the chicken in the oven at 350 for an additional 8-10 minutes, or until the center of the chicken is no longer pink.
 

Don't clean out the pan that you browned the chicken in. Saute the onion and garlic for 3-5 minutes on low heat, or until the onions are soft.
 

To the onions, add mustard, lemon juice, lemon zest, pepper, salt, and cornstarch.
 

Let the sauce begin to thicken and then add mushrooms and broth. Continue to stir the sauce until the mushrooms are soft and tender.
 

Once you are about ready to serve the sauce and the chicken is done, add milk and parmesan. Keep the sauce on low heat and let it simmer until the sauce is to your desired thickness (it will continue to thicken as it sits).
 

Serve the breaded and cooked chicken on a plate with a generous amount of the lemon sauce on top of the chicken. Serve the chicken with mashed potatoes and a steamed vegetable for a delicious meal!

Family History TuesdayZ | Favorite Objects

Here is this week's journal prompt :


My Memories :
I was a huge stuffed animal collector growing up. I had so many that they pretty much could fill up my room. Growing up, I had what we referred to as my "hut." My bed was kind of like a built-in bunk bed without a bed underneath it - instead there was a little room underneath the bed. I had some shelves for my books and other knick-knacks and then the rest of my hut was filled with stuffed animals. I loved snuggling in there and reading. 

I don't remember really sleeping with my stuffed animals - some of them did reside on the bottom of my bed. I did have a few favorites!

Whisper - is a big white unicorn that my parents brought back to me when I was about 3. They went on a trip (I think to Vegas) and brought it back to me as a souvenir. I would ride it and play with it and it was my very favorite. Even though it is really worn out - I still have it and have handed it down to my daughter - who also adores it.

Big Red - This huge bay clydesdale horse was at my grandparents house (next door). I don't know where my grandpa got it but I begged to have it for a really long time before my grandma gave it to me. I don't know where he ended up.

Black Cat - Even though cats have never been my favorite, this black stuffed kitty was given to me in the hospital when I was born by my older sister. I always loved it and feel very sad since I don't know what happened to it.

Panda Bear - My grandparents gave this to me for Christmas one year. It had really soft fur and was a treasure. My kids have it now.


Blankets - I also did have a couple of treasured blankets. One blanket was a dark pink with big blue squares (made for me when I was born by a neighbor/friend) that had different animals stitched inside. I adored this blanket and it went everywhere with me. Unfortunately, I left it at a friend's house at a sleepover and it was never returned. 
 

The other favorite was a baby blanket made by my great-grandma. It was a very soft pink on one side and the other side was white with tiny pink roses. There was a handstitched triangular border around it. I used it for my daughter as a baby blanket too and she used it way past toddler age before it completely fell apart.


I feel sad to not know where any photos of these are. I will have to take some photos of the ones I have left!





Each Tuesday, I am going to be offering prompts or ideas. If you don't write in your journal regularly - I am going to encourage you to write just ONCE A WEEK and answer the question/idea that I give on Tuesdays. These ideas hopefully will spark a memory and you will be able to capture that in what you write/record so that it can be left for your children/grandchildren/family/friends. Give as much detail as you can when answering.

Will you do this for me? Will you do this for your families? You can write it down in a journal, you can type it up on a computer or journaling software, you can take a recorder and talk, you can videotape your answers, you can even scrap a page with the journaling. It doesn't matter how you do this - it's just important that you do it. The memories, the dates, the information is the only real thing we can leave to our families when we are gone.

Monday Magic - Parenting with Positive Guidance


I have just become a part of a Facebook Group that allows me to connect with other bloggers and it has brought about lots of new opportunities for me. I've really enjoyed rubbing shoulders with new friends and experienced bloggers and I look forward to being able to offer more to you-my readers. Yes, I'm primarily a digital scrapbook designer and that is what started my blog, but I'm really interested in making it more. Over the years, I have added new things to my blog and I've really enjoyed making it a place of diversity and I hope that all of you can join in and participate in the new things that I have coming to the blog! I always love to hear from you - so feel free to comment! I hope you keep coming back!

As a parent, most of the time I have no idea what I am doing. I love my kids and I love our time together. But personally, I have a hard time with "teaching." I've never been much of a teacher and to be honest, it scares me. I want my kids to get the most out of life and grow up to be good, clean, honest people. I want them to be respectful and friendly and I just want EVERYTHING for them. But I believe for that to happen - I do have to teach them through example and through spending the time talking to them and teaching them and responding to them. I know many times I get caught up in the daily struggles and the to-do lists and sometimes I forget to sit down and listen to my children and just give them positive reinforcement. So, I need help! In this miraculous world, we have so many opportunities to help us and I'm so excited to share about a fabulous e-course that shares the tools to help us guide our families in positive ways!

Life 2012 | Moving Cows

I'm finally getting to blog about our annual trip to Bull Rush (my family's land on the Arizona Strip). I remember that growing up this was always something I looked forward to. Every year in the first part of June, we would head out to the Arizona Strip for the week to move our cows to the summer range at Sink Valley (my family's ranch near Alton, Utah). It is always a time of work, play, talks by the fire, and great family memories.

I'm so happy that my kids have had the chance to experience this special time. Even though, my kids are what my daughter calls "city kids," I grew up a country girl and I'm glad that I'm able to give my kids just a little part of the country life.  Sometimes I long to go back and live in my small town and raise my children the way I was raised. But things are different now and even if we could go back - it just wouldn't be the same. But at least a couple of times a year they get to spend time with the family at the ranch and I hope that it will still be something that they will have so many great memories of - the way I do.


We left Orem in the afternoon on Sunday, June 3rd. I was sad that Joey couldn't come with us, but one of these years I hope he can use his vacation time to go with us! We got to Bull Rush before dark and I was really glad "Toothless," our old mini-van made the trip across the rough dirt/gravel road. It was good to see all the family-including many of the Harris Family (cousins on the Sorensen side of the family) that I hadn't talked to in awhile. I love that people will come out and help! We slept in the van that night, since my parents occupied the house. It was not the easiest night - pretty uncomfortable, but we survived. The rest of the nights - my parents slept at Sink Valley after hauling a load of cows - so we got the house. The Harris Family and my sister Kori's family had nice trailers to stay in and many of the kids slept out on the springs around the house. It was quite the camp!

The next several days were spent gathering up cows, branding the calves, teaching my kids to ride a horse on their own, exploring, and lots of memories. I got to pick up my old job of vaccinating the calves during branding and my kids got to come and help me. The kids had such a great time playing with their cousins and getting dirty. It was definitely really hot too - and that is not my favorite part of being out on the Strip.  I was able to spend a lot of time with Kori - and it was really fun catching up with her and I really enjoyed the nightly cook-outs and just being together.  I enjoyed connecting with my little nephew, Dustin who is just growing up so fast.  One night - the kids and I sat and watched a big moon rise and it was an amazing experience. The land out on the strip is so flat and stretches out for miles and so watching the moon come up from the far distant mountains is just really neat. It was fun to see the gorgeous sunsets that are always present out there too. 


Unfortunately, it has been an extremely dry year and so the cows suffered quite a bit. Many of the cows ended up missing and later we discovered that several died trying to get down a canyon to water. We really really need rain. We did take a trip and hike to the canyon to see if we could find the cows and the kids enjoyed looking off into the "big ditch."


Beth had the chance on to go with her grandparents on the Peterbilt to Sink Valley on one of the trips and she spent the night there. She loved having all the attention from the grandparents and Uncle Clint and the much cooler air at Sink Valley. She especially loved playing in the treehouse and hanging out with her pal, Smokey the dog!


For the weekend, we ditched out on the final couple of days trying to search for missing cows and headed off to cooler weather to Sink Valley. We went to Orderville first and showered. It felt so good! Then we spent the night at Sink Valley and it was fun to visit and be with my parents. We loved having a cook-out and we even watched a movie on Grandpa's old setup of an old tv with a vhs player and a car battery! 


The kids love playing on the tire swing, the treehouse, and the old farming equipment. 


JJ's favorite was riding on the old buggy that Grandpa has been building out of all different kinds of parts.


We left for home on Sunday, June 10th and it was good to get home and see Joey. We really missed him. It was a great week though and I hope that we are able to keep it a tradition for many years to come!

** Here's something ironic for you - we really did go to move cows, but it turns out that I didn't take any pictures of the cows! LOL

High/Low + Freebie | August 24, 2012

My LOW this Week is that amidst all of the good things of the week-panic attacks have been abundant as well. But I'm working through them.

My HIGH for this Week is that I get to go on a date with my husband today. The kids are in school, Joey now has Fridays off.  A movie and lunch are on the docket! We haven't had time with just us recently and I am really looking forward to it!

More HIGHS of the week.....it's just been a really good week for me.  I feel like I am getting organized and got a bit of design work done - some fun things coming up in my blogging world, etc. I've been using all sorts of software, websites, and tools to help me organize my life and it has really been nice to have a clean house, have the calendar set up and on track, the kids doing chores and getting stuff done, menu done, blog posts done and lots of design time now that the kids are in school. It's pretty nice having such a great week!


I have a freebie today.  I just submitted my first entry for the Fabric Contest @ SpoonFlower. It was fun to design something different than just scrapbooking stuff. I look forward to seeing how my entry goes and I definitely want to keep trying my hand at fabric designing.  When the voting opens - I'll let you all know. I hope you will go vote for my entry! In the meantime, I converted that entry into a 12x12 Paper for you. I had a lot of fun with these colors and this COULD just turn into a kit in the next little while.  Enjoy this AUTUMN FLING Paper!
