Recipe Thursday - Poppyseed Chicken Casserole



This week's Recipe:
Such a great comfort food!


Poppyseed Chicken Casserole

2 cups chicken, cooked and diced
2 cups Ritz crackers, crushed
1 Tablespoon poppy seeds
1 (10.75 oz) can cream of chicken soup (I used 98% fat-free)
1 1/2 cups sour cream
1/2 cup butter, melted
1 teaspoon Worcestershire sauce (optional)
1 teaspoon minced garlic (optional)
1 Tablespoon lemon juice (optional)

Preheat oven to 350 degrees. 
Mix together chicken, soup and sour cream in a large bowl. Add in Worcestershire sauce, garlic, and lemon juice, if desired. In another bowl, mix together crushed crackers, poppy seeds, and melted butter and stir until butter is completely incorporated.

Spray a 9x13" baking pan with non-stick cooking spray. Spread chicken mixture on the bottom and top with cracker mixture. 

Cover pan with foil and bake for 15 minutes. Remove foil and bake for 15 more minutes.

Family History TuesdayZ | Winning

Here is this week's journal prompt :






Each Tuesday, I am going to be offering prompts or ideas. If you don't write in your journal regularly - I am going to encourage you to write just ONCE A WEEK and answer the question/idea that I give on Tuesdays. These ideas hopefully will spark a memory and you will be able to capture that in what you write/record so that it can be left for your children/grandchildren/family/friends. Recipe Thursday - Chicken Cordon Bleu Pasta



This week's Recipe:
So savory! Such a filling comfort meal!


Chicken Cordon Bleu Pasta

10-12 oz. penne or ziti pasta
2 cups heavy cream (I used milk and it still tasted great)
1 (8 oz) block cream cheese
1 tsp. onion powder
1 tsp. garlic salt
1 1/2 cup grated swiss cheese, separated
3/4 cup bacon, cooked and chopped
1 cup diced ham
 2 chicken breasts, cubed and cooked
bread crumbs

Cook pasta according to its package's directions. Drain. Add a little olive oil so the noodles won't stick together.

Heat cream cheese on stove over medium low heat until melted. Stir in heavy cream (or milk if you prefer). Stir until completely combined. Add onion powder and garlic salt. Stir 1 cup of cheese until smooth consistency.

In a 9x13, layer noodles, bacon, chicken, and ham. Pour sauce over top. Sprinkle top with 1/2 cup cheese and bread crumbs.

Bake at 350 degrees F for 15 - 20 minutes or until heated through.

Recipe Thursday - Stuffed Taco Shells



This week's Recipe:
Another great taco-filled pasta dish!


Stuffed Taco Shells

1 lb ground beef
1 package taco seasoning
8 ounce package cream cheese
2 cups sour cream
1 pkg jumbo pasta shells
1 cup salsa
1 cup taco sauce
1 cup grated cheese
1 ½ cups tortilla chips (crushed)
3 green onions (chopped)


Cook ground beef and add taco seasoning, sour cream, and cream cheese. Simmer until cheese is melted. Blend well. Set aside and allow to fully cool.

Cook shells according to package directions. Toss well with butter.

Pour salsa in the bottom of a 9x13 inch baking dish.

Stuff each shell with the meat mixture. Place the stuffed shells in the baking dish and cover the tops of the shells with taco sauce.

Cover and bake in the oven at 350 degrees for 30 minutes.

After 30 minutes, uncover, and sprinkle crushed chips and grated cheese on top. Cook for about 15 more minutes.

High/Low + Freebie | June 7, 2013

My LOW this Week is that I didn't really accomplish much this week. We are trying to get going on a new routine for the summer here in the Smith household and it's taking some time to get used to having the kids home all day.

My HIGH for this Week is that I'm blogging again! I don't know about you, but I'm excited that I have been getting some posts up this week - I guess that is accomplishing SOMETHING isn't it?

Recipe Thursday - Crockpot Taco Chicken





This week's Recipe:
Do you have a Taco or Mexican night for your family meals? This is a great recipe to mix it up with! It had great flavor!


Crockpot Taco Chicken
by DeDe Smith 

3 boneless, skinless chicken breasts
2 packages taco seasoning
8 oz package cream cheese
16 oz sour cream
1 cup salsa
2 cans cream of chicken soup

Rice or Pasta or Tortillas

Toppings:
Grated Cheese
Crushed Tortilla Chips

Put chicken, taco seasoning, cream cheese, sour cream, salsa, and cream of chicken soup into crockpot. Cook for 4-6 hours on high. Shred Chicken.

Serve over pasta or rice or wrap up in tortillas and top with grated cheese and crushed tortilla chips!
