Recipe Thursday - Hot Fudge Crockpot Cake


This week's Recipe:
This reminded me of this Steam Pudding that my Grandma used to make. It was a great dessert and so fun to make it in the crockpot. I sort of didn't make it the "diet-friendly" way, I used whole milk and regular chocolate pudding. Yum.



Hot Fudge Crockpot Cake
3 cups skim milk
1 box sugar free, fat free cook and serve chocolate pudding
1 box Supermoist Chocolate Fudge Cake Mix
1 1/3 cup of water
1/2 cup applesauce
6 egg whites


Spray a crockpot container with cooking spray. Whisk skim milk and dry pudding mix in a bowl until dissolved and pour into your crockpot. In a medium bowl, mix dry cake mix, water, applesauce and egg whites with a whisk for two minutes until blended. Very gently, pour cake mixture over the pudding mixture. DO NOT MIX! Cover and cook on high for 2 1/2 hours. Serve hot or store in fridge for a cool desert and top with Cool Whip Free.

I have noticed that stainless steel crockpots run hotter than the ceramic ones, so make sure and check the cake so that your do not over cook it. The time and temperature settings listed above are made for a ceramic crockpot insert. I have personally burned this cake using these settings with a stainless steel crockpot insert.

Ice cream may not be in your diet, but make sure you have some around in case you need to splurge a little with this hot fudge dessert!
